A fun twist on the traditional Chicken stick. Yummy!
1 c. sour cream or plain yogurt
2 T. bottled lemon juice
1 t. bottled crushed garlic
1 t. paprika
1/2 t. salt
1/4 t. hot pepper sauce
4 boneless skinless chicken breast halves (about 1 1/2 lbs.)
1 c. seasoned bread crumbs ...maybe more.
preheat oven to 475. Line two baking sheets with aluminum foil for easy cleanup
Put the sour cream or yogurt, lemon juice, garlic, paprika, salt and hot pepper sauce into a large bowl and mix well.
Slice the chicken breasts into strips 1/2 inch wide and 2 inches long and add them to the bowl. stir so that the chicken strips are covered with the creamy mixture.
Put half the bread crumbs into a shallow bowl. Roll each chicken strip in the crumbs, coating all surfaces and place it on a baking sheet. add more bread crumbs as needed. You will have enough chicken to fill two baking sheets. Discard leftover marinade.
Bake chicken for 8 minutes or until cooked through. Serve immediately or set aside until ready to eat and then reheat briefly.
