{mini greek burgers}

Sauce:
3/4 c. shredded, seeded, peeled cucumber
1/2 c. plain yogurt
2 t lemon juice
2 t snipped fresh dill ( I used 1/2 t dill seed)
1 garlic clove, minced
1/4 t salt
1/8 t pepper

Burgers:
3 T finely chopped onion
3 T minced fresh parsley (I used 1 T dried parsley)
3/4 t dried oregano
1/4 t salt
1/4 t pepper
1 pound ground turkey
4 pita breads (6 inches)
2 medium tomatoes, thinly sliced

In a small bowl, combine the sauce ingredients. Cover and refrigerate until serving
In a large bowl, combine the onion, parsley, oregano, salt and pepper. Crumble turkey over mixture and mix well. Shape into sixteen 2-in. patties.
Coat grill rack with cooking spray before starting the grill. Grill burgers, covered, over medium heat for 2-3 minutes on each side or until no longer pink. Serve in pita halves with tomatoes and sauce. (We just used the George Foreman grill).
YIELD: 4 servings

We LOVED these! perfect for a hot summer day. NO OVEN!!! YAY!!!! When we lived in a basement, I didn't really have to think about not cooking certain things because they required an oven. But now that we live in Las Vegas, I look for any way to get around it. These were awesome!
