{banana bread}

2 1/2 ripe bananas
2 eggs, well beaten
1/2 cup shortening
1 cup sugar
2 cups flour
1 tsp. soda
1/2 tsp. salt
1/2 c. walnuts (optional)

Beat bananas until liquid. Combine with eggs, set aside.
Cream together sugar and shortening until well mixed.
Add banana mixture and blend.
Add dry ingredients. Stir until smooth.
Fold in nuts. (optional)
Pour into well greased loaf pan
Bake at 300 for 45-50 min.

I love this! It's so yummy. and a really great way to get rid of those bananas that are over-ripe.
