I wouldn't say that these were anything different from other philly cheese steak sandwiches, but they were REALLY good.
4 6-inch long rolls... or whatever....
1 medium onion
1 medium green bell pepper
2 T olive or corn oil
1/2 lb. pre-sliced mushrooms (optional)
1/2 t salt
1/4 t black pepper
1 lb. sirloin steak or leftover roast beef
1 c. grated mozzarella, American or provolone cheese
Place an oven rack in the middle position and preheat the oven to 350. Place buns on a baking sheet and then set aside.
Peel and thinly slice the onion. Cut bell pepper into 1/2-inch pieces. Put the oil into a large frying pan and begin heating over medium-high heat. Add the onion, bell pepper and mushrooms, salt and pepper, and cook about 10 minutes, stirring occasionally, or until the vegetables are very soft. After they have cooked 5 minutes, put the rolls into the oven to heat. Add cooked meat to the vegetable mixture.
Remove the rolls from the oven and fill each with meat mixture. Add cheese to each roll and return to the oven for about 2 minutes, or until the cheese melts. Serve immediately.
